I've spoken about one of my grandmothers in my Beef Empanadas recipe, but this meatball recipe is slightly inspired by another grandmother of mine. My family isn't made of a bunch of cooks as it might seem but it's more just everyone has one or two recipes they've been making for years and we've all grown to love. I'm also just very sentimental and I consider food as one of my love languages 🤷♀️
We don't have a lot of Italian in us, in fact I did an Ancestry DNA test and I am actually 39% German and only 2% Southern Italian, but we all seem to have such a talent for making pretty damn good Italian dishes. This grandma actually makes an amazing homemade Alfredo pasta every holiday party that I demand to have every year. So THAT is why this recipe is slightly inspired by her. She demands to cook a feast every time the family comes to her house and most of the time it's all Italian food.
I've made these meatballs a ton of times for almost everyone in my life, I also modify them slightly every time I make them. One time I stuffed them with cheese and just served them by themselves with sauce, another is of course just basic meatballs with spaghetti, and other times I've messed with the ratio of sausage to beef. This recipe I'm sharing today is my go to and the one I'm always going back to make and is just overall a huge crowd pleaser.
My favorite ratio is about 1:1 in sausage to beef. I am a sucker for some good hot Italian sausages so I will always use hot if I can get my hands on it but if I'm making it for a crowd I'll do medium or mild. Also with my meatballs I always bake them first to make sure they're cooked all the way through then I'll put them in a pan to make sure they get a good sear on them for maximum flavor and lots of really nice textures.

Ingredients:
Yields approx. 14 meatballs
1 pound ground beef
1 pound ground sausage (I use hot)
2 large eggs
1 cup Italian breadcrumbs
1/2 cup grated parmesan cheese
1/2 cup diced onion (I like chunks, mince if you want them smaller)
1 tsp black pepper
2 tsp minced garlic
1 tsp Italian seasoning
1/4 cup dried basil
1 tsp parsley for garnish
Preheat oven to 400 degrees Fahrenheit, get a cooking pan and spray with nonstick cooking spray
In a large bowl add the sausage, beef, eggs, breadcrumbs, parmesan, onion, garlic, salt, pepper and Italian seasoning. Use your clean hands to mix thoroughly.
Measure meatball mixture to about 1/3 cup size or 3 oz. and shape into a ball. Place each meatball onto prepared pan with even spaces between
Bake about 10-12 mins then flip and bake for another 2-3 mins
Get a stove top pan and place the meatballs in and cook on medium low heat until each side gets a nice sear.
Optional: add them to your sauce right before it's done cooking to add some of the tomato flavoring and get them nice and coated with sauce
Top with parsley and serve the way you want! Great on their own or with pasta
